S798-1.jpgThis is a new favorite from the Officers’ Wives Cookbook.  I tried using brown sugar the first time I prepared this dish.  The second time I tried using molasses.  My husband and I enjoyed both variations but preferred it with molasses. 

4-6 pork chops

Salt

Pepper

Dash of ground sage

Oil

2 tablespoons flour

1 cup hot water

1 tablespoon white vinegar

1 cup raisins

3 Granny Smith apples, peeled, cored and sliced 1/4 inch thick

3 tablespoons molasses or brown sugar

Preheat oven to 350 degrees.  Season chops with salt, pepper, and sage.  Brown in small amount of oil.  Remove from skillet.  Stir flour into skillet.  Then stir in water, vinegar, and raisins.  Arrange chops in flat casserole.  Top with apples slices.  Pour molasses (or brown sugar) over apples.  Add flour mixture.  Bake covered for 1 hour and 10 minutes.
