Rhoda’s Recipes

S751-1.jpgI love the added flavor the toasted almonds add to this recipe.  My favorite way of preparing these is to cook them in the microwave in melted butter at high in 30 second increments until you get the toasted effect you want.  My husband tells me that I am eating pieces of wood when I use toasted almonds as a garnish. 

Therefore, you may decide to pass a bowl with the almonds and let each diner decide their own preference.

2 whole chicken breasts, halved, skin on

2 tablespoons shortening

15 ounce can tomato sauce

1 cup peach preserves

2 tablespoons chopped onion

1 1/2 tablespoons soy sauce

1/4 ground ginger

1/2 cup toasted sliced almonds (optional)

Brown chicken in shortening.  Pour off fat.  Combine next 5 ingredients and pour over chicken.  Bring to a simmer then cover and simmer for 1 1/2 hours turning every 30 minutes.  Garnish with toasted almonds if desired.
