S689-1.jpgI had never tasted Shepherds’ Pie before meeting my husband.  As it was one of his favorites, I tried a few different recipes before coming across this one in an old cookbook.   Even though this was the easiest, we also felt it tasted the best.  Using already prepared mashed potatoes makes it the fastest one to make as well.

 1 pound ground meat

1 medium onion, chopped

10 ounce package frozen peas and carrots, defrosted and drained

1 can Campbell’s tomato soup

1 teaspoon Worcestershire sauce

1/2 teaspoon salt

1/4 teaspoon basil

1/8 teaspoon pepper

1 package Simply Potatoes Traditional mashed potatoes

1 cup shredded Cheddar cheese

 Prepare mashed potatoes in microwave as directed on package.  Crumble ground beef into 2 quart casserole.  Add onion and microwave at High approximately 6 minutes, stirring every minute or two, until done. Break up meat and drain.  Stir tomato soup, Worcestershire, salt, basil, and pepper into meat mixture.  Sprinkle with defrosted vegetables.  Spoon potatoes over the top.  Microwave at High 7 minutes or until hot.  Top with cheese.  Microwave 2 to 3 1/2 minutes until cheese is melted.  Let stand 3 minutes before serving.
