Rhoda's Recipes - Spinach Dip

S665-1.jpgThis recipe was given to me by a friend but appears on the back of the Knorr Vegetable Soup Mix box.  It makes a large amount of dip (over 3 cups) but often disappears quickly if you are serving it at a party.  I always hope I have some left to bring home to snack on later!

10 ounce package frozen chopped spinach, thawed

1 cup mayonnaise

2 cups sour cream

1 package Knorr Vegetable Soup Mix

3 green onions, chopped

8 ounce can water chestnuts, drained and chopped

Crackers, my preference is Ritz Crackers

Squeeze thawed spinach until relatively dry.  Mix well with remaining ingredients except crackers.  Cover and refrigerate at least 2 hours.  (I usually wait longer.)  Stir well before serving with your choice of crackers.
