S562-1.jpgThis recipe calls for cubed ham.  For me the easiest way to accomplish this is to get a ham steak and cut it into cubes.  Make sure the steak is thick enough to get the de-sired effect.  Also, most of the time pineapple tidbits come in a can that is larger than need-ed.  If it is large enough and is packed in its own juice, just use 1/2 cup of the juice from the can to use in the recipe.

3 tablespoons butter

3 tablespoons chopped onion

2 tablespoons flour

1/2 cup pineapple juice

1/2 cup pineapple tidbits

1/3 cup brown sugar

2 cups (about 12 ounces) cubed cooked ham

29 ounce can Bruce’s Yams, sliced 1/2 inch thick

Melt butter in a 1 and 1/2 quart microwave safe baking dish in the microwave.  Add onion to melted butter and cook 2 minutes at 100 per-cent.  Blend flour in to onion butter.  Stir in pineapple juice and cook at 100 percent until thick.  Stir in pineap-ple tidbits, brown sugar and ham into sauce.  Place yam slices around edge of an 8 inch round glass cake pan (or 9 inch glass pie pan).  Pile ham mixture into the center.  Cover with waxed paper and bake at level 8 in the micro-wave for 8 to 10 minutes.
