Rhoda’s Recipes- Baked Pork Chops with Gravy

S533-1.jpgI often find that recipes I try for pork chops result in chops that are on the tough side.  This one produces chops that are nice and tender.  The gravy adds a lot of additional flavor, making this my very favorite pork chops recipe.

6 center cut pork chops, trimmed

1 tablespoon margarine or butter, melted

1 large onion, chopped

3 tablespoons flour

1 cup milk

1 cup evaporated milk

1/4 teaspoon salt

1/2 teaspoon oregano

1/4 teaspoon marjoram

1/4 teaspoon ground thyme

1/3 cup chopped parsley (or 1/6 cup dried parsley flakes)

Pre-heat oven to 300 degrees.  Brown chops quickly in hot skillet.  Place in large flat casserole.  In same skillet, sauté onion in butter until brown.  Stir in flour, then all of the milk.  Whisk until smooth.  Add remaining ingredients.  Stir.  Pour over pork chops.  Bake covered in oven for two hours, stirring gravy twice while cooking.  Once chops are removed from oven, remove any accumulated fat.  Stir gravy again and serve over the chops.
