Rhoda’s Recipes

S492-1.jpgI got the recipe for the salad from one source and the dressing from another.  The dressing is delicious and makes quite a bit so you will probably have left over salad dressing.  Many packages of spinach are now pre-washed saving you a lot of time.  I don’t like the texture of the stems so I remove them.  When preparing the bacon, I cook the bacon in an oven set at 350 degrees until done.

Dressing ingredients:

1/2 cup sugar

1/3 cup catsup

1/3 plain vinegar

1 cup salad oil

5 tablespoons

Worcestershire sauce

1 small onion, quartered

Salad ingredients:

Well washed and drained raw spinach, approx.

3/4 of a pound

1 can La Choy bean sprouts, well drained.  (Geisha brand is not crisp enough)

8 rashers bacon cooked and crumbled

3 hard boiled eggs, chopped

Place all the dressing ingredients in to a blender and blend until smooth. Refrigerate.

Tear the spinach in to bite sized pieces.  Toss with the remaining salad ingredients.
