Rhoda’s Recipes – Chocolate Delight

This is another recipe that was given to me years ago by a square dance friend.  One year when I brought it to a Christmas celebration, two of the ladies said that they called the dessert “Robert Redford”.  When asked why they replied, “Because it is yummy like Robert Redford”.  Unfortunately, Robert Redford is no longer “yummy” but he certainly was many years ago!

1 cup flour

¼ cup brown sugar

1 cup chopped pecans

1 stick butter or margarine

8 ounces softened cream cheese

1 cup confectioner’s sugar

1 large tub Cool Whip

2 small packages instant chocolate pudding mix

3 cups milk

¼ cup chopped pecans (optional)

Mix the first 4 ingredients and spread on the bottom of an ungreased 9 inch by 13 inch pan.  Bake at 350 degrees for 15 to 20 minutes until golden brown.  Cool.  Mix the cream cheese and the sugar together.  Then mix in 1½ cups of Cool Whip.  Spread over the cooled bottom layer.  Mix the packages of pudding mix and the milk together.  Spread over the cream cheese layer.  If desired top with the ¼ cup of pecans.

I like it even better the next day as the crust has a chance to soften up a bit.
