Back when I was a Navy wife, the wife of the ship’s captain had all the officers’ wives over to dinner.  I loved her Bourbon Sweet Potatoes and it has since become a family favorite to be served every Thanksgiving and Christmas.  I prefer the marshmallows on top to become caramelized.  If you prefer just browned marshmallows check part way through cooking and cover the dish when they are to your liking and continue cooking.

2 cups mashed cooked sweet potatoes 

    (I use a 29 ounce can of Bruce’s Yams, drained)

1/3 cup sugar

1/4 cup bourbon

1/4 cup orange juice

1 egg

1/4 cup melted butter

Miniature marshmallows

Blend the first 6 ingredients together.  Place in a flat casserole.  Top with marshmallows.  Bake uncovered at 350 degrees for approximately 1 hour.
