Rhoda’s Recipes - Hawaiian Beef Loaves

S141-1.jpgThis is a recipe from my recipe box that I have had so long that I am unsure where I first saw the recipe but it has always been one of my favorite meatloaf recipes.

The addition of soy sauce to the beef loaf mixture creates a slightly different taste than a standard meatloaf but the real standout is the glaze. The recipe for the apricot glaze is plentiful enough that it also serves as a sauce to pass with the finished dish.

 

1 envelope brown gravy mix

½ cup milk

1 thin slice onion

2 eggs

I sprig parsley

2 teaspoons soy sauce

½ teaspoon salt

1 ½ slices of bread,

 torn in to pieces

2 pounds of ground beef

8 ¾ oz. can apricot halves (preferably in syrup) 

undrained

¼ cup vinegar

1/3 cup brown sugar

 

Put the first 8 ingredients in to a blender and mix. Combine with the beef and shape in to two loaves. Bake in a shallow dish at 350 degrees for 50 minutes.

Meanwhile, put the remaining 3 ingredients in to the blender and blend until smooth. Place in a small saucepan and simmer for 5 minutes. Baste the meat loaves with the sauce and bake an additional 15 minutes. Serve the remaining sauce with the meat loaves. ■
